Cronut-master and renowned chef Dominique Ansel invites you to enjoy a weekly series of suppers, What Mom Cooked on Sundays, highlighting the authentic roots and recipes of each of 189 by Dominique Ansel’s talented chefs.

Sunday, September 23
Executive Pastry Chef LeeAnn Tolentino & Pastry Sous Chef Melanie Patricio’s Filipino Supper

  • Lumpia Shanghai (Chef Melanie’s mom’s recipe): filled with carrot, onions, and sweet pickled relish, with sweet chili dipping sauce
  • BBQ Chicken Skewers
  • Atchar: pickled green papaya salad with bell pepper and carrots in a sweet vinegar dressing
  • Crispy Lechon: slow-roasted pork belly with a soy, shallot, garlic dipping sauce, with a kick of Serrano and calamansi
  • Garlic Fried Rice, a family staple
  • Leche Flan (Chef LeeAnn’s grandmother’s recipe): condensed and evaporated milk, vanilla, and orange

Sunday, September 30
Sous Chef William Pentecost’s French Supper

  • Poireaux Vinaigrette: steamed tender leeks with shallots, chives, Dijon vinaigrette, and soft-boiled quail egg
  • Cervelle de Canut: fromage herb cheese with tarragon, chervil, chives, parsley, served with grilled baguette
  • Tarte Flambée: pancetta, onions, crème fraîche, and caramelized onions
  • Cassoulet with Confit: duck legs, pork belly, garlic sausage, and white tarbais beans
  • Tarte Tatin: caramelized apples, a buttery sablé breton base, and crème fraîche

Sunday, October 7
Pastry Sous Chef Jennifer Oh’s Korean Supper

  • Pajun: a crispy vegetable pancake served with a sesame mirin and spicy scallion salad
  • All The Colors Japchae: marinated beef, carrots, spinach, woodear mushrooms, egg, and glass noodles in a sesame vinaigrette
  • Kimchee Fried Rice
  • Kalbi Jim: braised short ribs with daikon, carrots, chestnuts, and an Oh-Family secret soy braise
  • Hodduk: a traditional Korean street food similar to a sweet pancake, with a brown sugar and chestnut filling
